F&B Italian Excellence Lab


Beautiful, good and well made”, these are the basic principles of the Italian Contemporary Essence which are the main focus of study and research of the SDA Bocconi F&B Italian Excellence Lab.

The basis for the international success of Italian food and beverage brands lies in the distinctive traits such as aesthetics (style, design and good taste in beauty), excellent quality (raw materials, craftsmanship and the handing down of productive wisdom) and creativity.

The aim of the research conducted by the F&B Italian Excellence Lab is to give value to these success factors to provide businesses within the sector continuing stimulus for discussion and attentive oversight of today’s most important management topics.

Research team

The F&B Italian Excellence Lab research team is led by Vittoria Veronesi, Lecturer of Operations and Technology and Director of the Master of Management in Food and Beverage Program at the SDA Bocconi School of Management.

She is a Contract Professor of Management at Bocconi University. She holds a Ph.D. in Logistics and Supply Chain Management from the University of Bergamo, in collaboration with Bocconi University and the Massachusetts Institute of Technology – Zaragoza Logistic Centre (MIT-ZLC), 2014. Her research is focused on supply chain management strategy and design, and on operations management.

More recently, she was engaged in an in-depth study on the topic of supply chain management and operations of companies in the food and beverage, and fashion sectors.
