Mindy Simon is Chief Information Officer for Conagra Brands. In this role, Mindy has enterprise responsibility for global business services, information technology, cyber security and leadership in modernizing the enterprise across business processes and technology including digital transformation leveraging capabilities such as advanced analytics, robotics, low/no code automation and modern infrastructure.

Since joining Conagra in 2000, Mindy has held a variety of roles in business transformation, finance, and information technology. Her responsibilities have included analyzing economic indicators and tracking major commodity markets and auditing in finance, and leading business and technology transformation across the organization in support of multiple businesses including consumer brands, private brands, foodservice, flour milling, potato processing, commodity trading, and meat processing. Mindy led global business services, including shared services across sales, supply chain, marketing, ecommerce, finance and R&D prior to becoming CIO. Mindy most recently led the integration of Pinnacle Foods, a $11 billion acquisition including over 40 iconic brands such as Birdseye, Duncan Hines, Wishbone and Garden, and 15 manufacturing plants.

Mindy holds a B.S. in agricultural economics from the University of Nebraska – Lincoln and a M.B.A. from Creighton University. She serves on the Omaha Chamber of Commerce board of directors Executive Committee including Chair of Economic Development, Aksarben Foundation, Nebraska Tech Collaborative Executive Committee, T200 Women CXO’s in Tech, Creighton College of Business board of advisors, and has served on the Girls Inc. of Omaha board of directors. Mindy and her husband Jon enjoy raising their four children and a menagerie of animals outside of Omaha.
